Perfect Parfait

Fruit and yogurt parfaits are readily available everywhere now because it makes a great easy and healthy snack. But while granola is full of whole grain goodness, it usually has a lot of sugar from the sweetened granola and (usually) sweetened yogurt. Some parfaits (especially store bought ones) can have as much sugar as a candy bar! Of course, I have a delicious and healthier alternative for you! I call it my Perfect Parfait, and I’ve been eating it for breakfast pretty much every day for the last week.Hopefully, you’ll enjoy it as much as I do!

Ingredients:

  • 1/4 cup of almonds, crushed (you can use a mixture of nuts too! I like almonds and walnuts)
  • 1 cup low fat greek yogurt (you can use any kind of yogurt, like soy, but greek yogurt is packed full of protein)
  • 1/2 cup mixed berries (thawed, if frozen)

Directions

  • Crush the nuts with a food processor or blender. Or, if you have some aggression to work out, put it in a ziplock bag and get to smashing with a rolling pin
  • I’m a simple parfait kind of guy, so I just throw the nuts in a bowl, pour the yogurt on top, then top with berries. You could make it fancier by layering the ingredients and putting it in a fancy glass too.
  • Enjoy!
